Up until this year I’ve always been a bit resistant to pancake day. Making thin pancakes, drizzling lemon on it and then sprinkling sugar them just seemed odd. I like my pancakes big and fluffy with lots of syrup. With Squidge in school now and everyone making a big deal out of it I thought I better get on the pancake bandwagon.

I totally cheated and used a pre-mixed package and just added eggs and water. Squidge enjoyed whisking everything together.

I tried to make them as thin as possible but the batter was a little bit thick. I tried to add some more water but was worried about ruining it so I just made do.

After drizzling some fresh lemon juice on the pancake and sprinkling some caster sugar it was eating time!

As you can see a certain someone LOVED her pancakes!

I’m glad I decided to participate in this very English tradition even if I did do it a little bit wrong! Wal worked late last night so we waited to make the last pancake when he was home. I made my thin pancake, drizzled and sprinkled and rolled. Wal took one look at it and told me “we” usually eat it flat. I told him to drop the fork and just eat it with his hands, it tastes better that way!!

Hiya! Just wanted to wish everyone a happy Boxing Day!!! One of the joys of living in England– an extra day off for xmas!! We went to see Northwich Victoria play– they lost! I spent the second half of the game in the car w/ Squidgyboo because it was too cold and she’s a bit grumpy. She’s finally teething… I think. Christmas was good. I spent hours in the kitchen cooking too much food but it was nice. I got a gym membership ( I asked for it), a digital camera and a Gotan Project CD. I gave Wallywoo an IPod speaker system, a pair of flannel jammies and a box of chocolates. Squidgyboo got a LaLa from the Teletubbies and a Teletubbies CD. She’s too little to appreciate xmas but we noticed that she laughes whenever the Tellytubbies are on.

I took some photos of Squidgyboo w/ the new camera. This one is my favorite.

I’ll post more when I get a memory card. I hope everyone had a very merry xmas. I’m going downstairs to help Wallywoo eat that box of chocolates he received…
